Role Purpose Statement
The Sanitation Manager is responsible for developing and directing the Sanitation program and ensuring that all current Food Safety Standards are being met in the CSC's. The Sanitation Manager will develop sanitation trainings and support facility sanitation management to be able to identify and correct sanitation issues and to reinforce all current food safety standards. The Manager will be responsible for communicating key sanitation concerns and KPI's with the Quality and Food Safety Director, General Manager, and all Sanitation staff in the facilities.
Main Accountabilities
Develop and maintenance of Sanitation programs (SSOP, HACCP, Allergen) for full compliance with customer and regulation requirements
Plan, organize, develop and lead training in sanitation and food safety standards that are customary within the airline catering and mandated by government regulations FDA/USDA (including FSMA) and full compliance with customer’s specifications and corporate standards
Gather and explore regulatory sources FDA/USDA to develop sanitation training materials and customize according to the target audience
Provide guidance for customer complaint related to sanitation and assists the facilities team to identify and resolve root causes of complaints
Attend professional events to keep the knowledge up to date and build network
Maintain up-to-date knowledge of: Food Safety Modernization Act (FSMA) Codex Alimentarius Standards, Corporate and Customer standards
Work with the regional and the facility food safety and quality management in identifying sanitation or regulatory opportunities at each CSC
Develop and manage the implementation of the sanitation and food safety programs such as: cleaning, sanitation, environmental monitoring, allergen control
Develop the Master Sanitation Schedule and support implementation for each facility
Assist in controlling and maintaining sanitation and traveling budgets
Manage chemical suppliers and chemical control programs including concentration test protocol for sanitation chemicals used, technical supports and other related activities
Manage, communicate and train OSHA safety requirements applying to all sanitation practices. Ensures that all chemicals used in facilities are approved for such use and that all chemicals have current Safety Data Sheet (SDS) information at each facility
Develop and train Sanitation Managements in all steps of each SSOP
Oversees pest control and allergen control programs with sanitation related activities.
Manage sanitation verification and validation programs and associated systems
Develop training programs for all levels to ensure basic standards and company requirements are part of basic practice
Interface with Procurement, PSD, Infrastructure Engineering and LPS
Evaluate sanitation programs, current sanitation practices and ongoing strategic sanitation needs to ensure the sanitation related quality and food safety expectations are being met
Search technical innovations and application of sanitation implementation and best practices to contribute in sanitation and food safety system improvements
Manages other projects as assigned
Knowledge, Skills and Experience
Bachelor’s degree in Science or equivalent knowledge required
Registered Environmental Health Specialist/ Registered Sanitarian (R.S) or National Environmental Health Association (NEHA) Certified Professional in Food Safety (CP-FS)
ServSafe certification
Five years’ experience conducting sanitation in food related field required
Extensive work knowledge of FDA Food Code
Expertise developing and implementing SSOP requirements in food manufacturing
Experience in conducting external and internal audits and using those results to improve future performance
Extensive knowledge of sanitation systems, KPI tracking systems, and ability use data and trends from those to improve quality
Proactive problem-solving and creative decision-making skills
Ability to facilitate groups and communicate effectively at all levels in the organization
Strong oral, written and interpersonal skill with analytical, organizational and planning expertise
Strong knowledge of Microsoft Office and Windows-based computer applications
May require up to 50% travel
